Looking to have a stress-free March break? Here are a four (4) snacks you can prep ahead to make your life a little easier.
Veggie Stix: Cut up carrots, celery and cucumbers into sticks. Store them in an air-tight glass container or mason jar and place a damp piece of paper towel in the container to prevent the veggies from drying out
Chocolate Chip Muffins:
Ingredients: Makes about 8 muffins
- 1 ½ cups all-purpose flour
- ½ cup sugar
- 2 teaspoons baking powder
- ½ teaspoon salt
- ⅓ cup avocado/light-tasting olive oil
- 1 large egg
- ⅓ cup milk, or more as needed
- 1 tsp vanilla extract
- 1 cup chocolate chips
Steps:
Preheat the oven to 400 degrees F. Grease muffin cups or line with paper liners.
In a bowl, whisk flour, sugar, baking powder, and salt together in a large bowl.
Pour oil into another bowl, add egg, milk and vanilla extract. Whisk until combined.
Pour into flour mixture and mix just until batter is combined. Fold in chocolate chips and scoop into muffin cups. Sprinkle with some additional sugar on top (optional).
Bake in the preheated oven until a toothpick inserted in the center of a muffin comes out clean, 18 to 20 minutes or until a toothpick inserted into the muffin comes out dry.
Smoothies:
Blend some Greek yogurt, bananas, blueberries, strawberries, cooked rolled oats and milk or coconut water together until smooth. Pour into cups and store in the fridge for up to 3 or 4 days.
Fruits:
Wash fruits and pat to dry. Cut up fruits and place into mason jars. Store for up to 3 days in the fridge.
